YESTERDAY...

time passed exceptionally slowly...

Afterall, I only had a class in the morning and the assignments, presentations and mid-terms are all completed. What more could one ask for, eh?

Came home and felt the sudden urge to make something to eat. Remembered Yen mentioned something about wanting to eat pancakes so decided to satisfy her pancake-cravings since she was due for a presentation in Presentation Skills that afternoon. =)

Found a yummy pancake recipe off SunshineCooking's site... Turned out really good! Love the recipe so I guess I will stick to this pancake recipe from now on. Nigel helped with the cooking, so it was really fun. I've heard enough stories about horrifying house-mates and room-mates in college so having lousy people to stay with was something I wanted to stay clear off.... Thank God for awesome house-mates and a totally rocking chic for a room-mate! We have a TON of good times together. So, making pancakes with Nigel was fun.

I thought I'd try whipping up some cream and top them with fruits to makan with the pancakes but while whipping, Nigel took out the Hershey's Strawberry Syrup and dropped a drop in and then whisked the cream. Thought the pink cream looked really good so added many more drops of pink syrup till I got the color I liked. Then an idea hit me... "We could just bake muffins and use the whipped cream for frosting!!". Afterall, Ninix wanted to bake together... or so he said. Turned out it was just me doing the whole thing alone...which was perfectly fine still. Not that I'm complaining. ( I mean, a guy gotta do what a guy gotta do - dotA! =P) Muffin texture turned out nice... Taste was not too sweet. One thing I finally learned was to taste the muffin/cookie/cake when it's completely cooled on the rack and NOT right after it's out of the oven... =D Made just vanilla muffins in the end instead of both vanilla and chocolate.

I think I like this muffin better than the cupcakes I made the other day. Will post up pictures
